Our Mexico, sourced from the newly formed EK-BALAM Co-op in the Chiapas region, is what we suggest for drinkers who want a deeper dark roast profile. This cup leads with heavy roasted almond notes and a silky-smooth body, and opens up with a deep red plum aid. Founded in 2019, EK-BALAM, or "Star-Jaguar", separates producers' lots and compiles the best of all offerings. This ensures that the finest characteristics of the Northern Chiapas region are exemplified.
